Favorite Vegan Breakfasts

Not even gonna lie, my top three favorite breakfasts are oatmeal, toast, and pancakes. Those are the three things I'll always make and if I don't feel like cooking for breakfast, I'll either have fruit or I'll have just coffee and wait until I'm ready for lunch. Sometimes I'll make hash browns too but not very often actually. I've included links to all my favorite breakfast recipes at the end of this post.  Switching to a vegan/plant-based lifestyle was the best decision I've ever made. I feel like everything about myself is different and I have a whole new appreciation for my health, the planet, the animals, and everyone else. It has taught me to have compassion for those who can't communicate like we do, it's taught me to love animals (even though birds scare the crap out of me), and it's taught me to cook like I've never cooked before.

My Vegan Story

I often get asked how long I've been vegan. But being totally honest here, I have no idea. I often just throw out a number, sometimes it's 2, 3, and I've even said 4 before. I think I made the switch from vegetarian to vegan early 2013 but I don't remember an exact date or even what month. It wasn't some historic moment for me. I made the decision and the next day I started on my vegan journey. I stopped eating chicken and fish, then moved on to cheese, and the rest is history. It took me a little while to totally get myself away from eating cheese (cause damn, it's addictive) and then I had a moment where I thought I could be vegan but eat fish sometimes (which we all know that's not how it works) but eventually a few months later I was totally vegan!

I started to clean out my closet, getting rid of any leather/suede items. Of course there were a few things that weren't totally beat up yet and I'm a firm believer in using it until it's beat to hell. I'm not going to throw it out because we all know money doesn't grow on trees. Also what's important is that once it's totally falling apart, it gets replaced with something that doesn't contain any animal flesh.
